A delicious and creamy macaroni and cheese recipe that's perfect for a cozy night in. This recipe is easy to make and uses simple ingredients that you may already have in your pantry.
- 500g macaroni pasta, cooked al dente
- 50g unsalted butter
- 400g milk
- 1 tbsp cornflour
- 300g grated Red Leicester cheese
- 100g grated cheddar cheese
- 1 tsp nutmeg
- 3 tbsp paprika
- Salt and pepper to taste
- Preheat the grill in your oven to 220°C.
- In a bowl, mix the cornflour, cheddar, and Red Leicester cheese.
- In another bowl, mix the milk, nutmeg, and paprika (add 1 tsp chilli flakes if you like it spicy).
- In a small pot over medium heat, mix the cooked pasta with the butter until combined.
- Add the cheese and milk mixtures to the pot and stir continuously for about 6-8 minutes until everything is melted and combined.
- Spoon the pasta into a large oven-safe dish and bake uncovered for 15 minutes, or until the top is golden brown and bubbling.
