This vanilla cake recipe is a timeless classic that is simple to make, yet deliciously sweet and fluffy in texture.
Ingredients
For the cake:
- 250g melted butter
- 1 cup of sugar
- 4 eggs
- 1 tsp vanilla extract
- 2 cups of self raising flour
- Optional: nuts/chocolate chips/frozen berries
For the caramelised nuts:
- 100g butter
- 2 cups of brown sugar
- 5 tbsp of water
- 200g chopped nuts (such as almonds, walnuts, or pecans)
Method
Preheat the oven to 170 degrees. In a mixing bowl, combine 250g of melted butter and 1 cup of sugar. Add 4 eggs and 1 tsp of vanilla extract, and mix well. Then, gradually add 2 cups of self-raising flour while continuing to stir. At this point, your cake batter is ready. You may choose to add nuts, chocolate chips, or frozen berries to make it even more delicious, or simply leave it as it is.
Next, pour the batter into a cake pan lined with baking paper and bake for 30 minutes or until a skewer comes out clean.
To make caramelised nuts, melt 100g of butter, 2 cups of brown sugar, and 5 tbsp of water in a small pot over medium heat. Once the mixture has turned into a dark caramel, add 200g of chopped nuts and stir until thickened (the mixture will thicken more once cooled).
When the cake is finished baking, pour the caramel onto it and let it cool on the counter until ready to enjoy. Bon appétit!
