What you need:
400g chopped tomatoes
Small onion, chopped
2 garlic cloves, chopped
1 tbsp tomato paste
1 tbsp sweet paprika
1 tsp cumin, salt, pepper
Feta cheese (optional)
Preheat the oven to 200 degrees.
Place the onion and garlic in an oiled pan on high heat and stir for about 3 minutes. Add the spices and tomato paste and stir for 2 minutes. Add the chopped tomatoes, stir for about 5-8 minutes.
Slice the top of the bread loaf and dig in to create a bowl. Spray/brush oil and place in the oven for 5 minutes.
Take the bread out of the oven and put the tomato sauce inside. Use a large spoon to make small wells in the sauce and crack the eggs into the well. Top with feta cheese and coriander and place in the oven for 15 minutes.
