260g (2.5 cups) rolled oats
60g (4 tbsp) mixed nuts (whatever you have in your pantry would work, including cranberries)
50g (2 tbsp) maple syrup (or honey/dates syrup)
80ml (1/3 cup) olive oil (or coconut oil)
Preheat the oven to 170 degrees.
Mix all the ingredients in a bowl until well combined.
Spread evenly on a baking tray with parchment paper on and place in the oven for 25 minutes.
Toss the granola every 10 minutes to ensure even baking.
Take out of the oven and let the granola cool down completely before eating.
Enjoy! (I know you’ll never eat store bought granola again ?).
